I love avocados, but honestly, they are so stressful to buy. You wait days for them to ripen, and then you have about a five-minute window to eat them before they turn into a brown, mushy mess. I can't even count how many halves of avocados I've had to throw away just because I didn't eat the whole thing right away.
I've tried all the standard advice: leaving the pit in, wrapping it tightly in plastic wrap, squeezing lemon juice on it. Some of it helps a little bit, but nothing really stops that inevitable brown layer from forming.

So, what's the secret? Water.
Yes, just regular, cold tap water.
Here is exactly what you need to do:
- Cut your avocado: Slice it in half and use the portion you want.
- Keep the pit (optional but recommended): Leave the pit in the half you want to save. It helps protect the flesh underneath it.
- Submerge it: Grab a small airtight container. Place the leftover avocado half, flesh side down, into the container.
- Add water: Pour cold water into the container until the avocado is completely submerged. The water acts as a perfect, airtight seal against the oxygen.
- Seal and refrigerate: Put the lid on the container and stick it in the fridge.
Why This Works So Well
It’s basically creating a physical barrier. Water completely blocks oxygen from reaching the surface of the avocado. When you take it out a day or two later, you'll be amazed. It stays beautifully green.
Now, I will say, the very top surface gets a tiny bit soft from the water, but you can just lightly pat it dry with a paper towel before you eat it. It doesn't get soggy, and the flavor is exactly the same.
A Quick Safety Note:
There was a trend going around a while back where people were storing whole, uncut avocados in water for weeks. Don't do that! The FDA actually warned against it because harmful bacteria on the skin can multiply in the water and seep into the fruit.
This hack is strictly for storing an already cut half of an avocado in the fridge for just a day or two.
